Lune Patisserie is one of those places in Melbourne that you just have to experience to understand the hype. It is all about bringing the taste of France (Paris) to Melbourne in the form of delicious tasting pastries and croissants.

Lune wants you to have that unmistakable Parisian experience of catching the scent of butter wafting down the sheet and following your nose only to find an unassuming hole-in-the wall bakery, where you will be served by the baker and you will experience what it is like to eat a croissant that was pulled from the oven no longer than one hour ago.

Located in Elwood (near the intersection of Scott and Tennyson Streets), Lune resides in a quaint double storey house, where owner and baker connoisseur Kate Reid – a former aeronautical engineer who worked as an Aerodynamicist for Formula One – resides as well, together with her business partner / brother Cam. Reid was inspired by a visit to Paris where she visited the famous Du Pain et des Idess and their delectable pastries and was inspired to pursue her love and passion for baking. Reid’s journey is wildly interesting – she began as a sales assistant at Phillipa’s Bakery before moving onto Three Bags Full where she was a pastry chef. As great as these jobs were, Reid had a longing for Paris and took a chance in emailing Du Pain et des Idess and asking them to take her on as an apprentice – which they agreed on. And the rest as they say was history! Reid worked under some of the best pastry chefs in Paris, including Christophe Vasseur who was awarded the Best Baker in Paris by Gourmet magazine in 2008 and Baker of the Year 2012 by respected restaurant guide Pudlo Guide – learning all there is to know about Parisian style patisserie. Reid then moved back to Melbourne where she is renowned for some of the best croissants in Melbourne with lines of people waiting to devour these goodies being a testament.

The croissant is understood to be one of the hardest pastries to master – requiring three days of preparation and four different types of machinery. The key factor is the butter used to make the croissant – you should be able to smell the butter before you bite into – creating a rich buttery goodness. The freshness is yet another key factor – and should generally be eaten within two to three hours of being baked. Another important aspect is that a croissant should be light and flaky – Reid says that after eating a croissant you should have a lap full of flakes!

Croissants take three days to make, with resting between each process to help the dough develop complexity of the flavouring. Reid follows a recipe she learnt from Du Pain et des Idess, which she adapts for Australian flour and milk, and to suit herself. On day one, the dough is mixed and rested for an hour before an 18-hour period of slow fermentation at a cool temperature.
On day two, she flattens the dough and laminates the butter into it, a process called beurrage, which takes up to five hours each day. The butter is folded through the dough and rolled out to create up to 27 layers. Between each fold and roll the dough must be allowed to rest or the gluten will overdevelop and ruin the flavour.
On day three, for the final rollout, the pastry is pressed to a thickness of about four millimetres, cut, and shaped. Once it’s at this stage, you must work quickly to get the croissants into the prover. Then, they are egg-washed and baked at 4am, and so the day begins again.

“Cruffins” is basically a croissant made in a muffin tin—often filled and topped with seasonal ingredients. Past cruffins flavours have included Pavlova, Tiramisu, Lemon & Kaya, Apple crumble, Lime & Yuzu, and “Cherry Ripe”.

On this Saturday morning – my friend and I decided to meet at Lune at 6:30am (which meant I had to be up by 5:45am!!). We both however overslept and I ended up getting there around 10 to 7. As I drove past Lune in search of a car park – I could see the line was at least 20 deep already! Once you arrive at Lune, the process is to line up for a ticket number (they only give out 60 tickets per day), and order a coffee; if you wish – and at that time of the day my guess is that you would definitely be in need for one.
The staff are super friendly, perky and chatty (especially since they would have been up even earlier than me!). I receive ticket number #29 along with the menu, and am asked which pastries I would be interested in. Reid’s brother – Cam – explains that the special flavoured pastries such as the Snickers Croissant (there were 10 available), Coconut Pandan Croissant, Tiramisu Cruffin (only 18 were made) have limited quantities. Whilst you receive your ticket number, you also have the opportunity to order a coffee (much needed especially given the time that some people arrive here!) and head on down to line up in the queue.

Lune officially opens its doors at 8am which gives you quite some time (depending on how early you arrive) to peruse the menu and decide which six pastries you want to take home – if you want to take home six (the average amount that people usually buy is four).

Once the blinds come up and Lune is open for business – you can hear the anticipation from people towards the back of the line as they wonder if they will get their first choice selections.

My order was as follows:

1 x Croissant – Traditional French Crossiant, prepared over 3 days

1 x Choc-Almond: Pain au Chocolate style, with almond & orange frangipane

1 x Kouign Amann – Traditional pastry from the Bretagne region of France – laminated with sugar and baked in a buttered, sugared mould until caramelized

1 x Cinnamon Kouign Amann – as above, with cinnamon added to the laminated pastry

1 x Cruffin – A Lune original Croissant pastry baked in a muffin tin and filled with weekly changing flavours – Jam & Cream and Tiramisu

1 x Twice Baked – Available weekends only – Traditionally in France left over croissants are sold the following day, filled with an almond frangipane and baked for a second time. At Lune we offer the traditional Almond Croissant, as well as special twice baked Croissants.
Almond: The original Croissant aux Amande, prepared with almond frangipane & garnished with a healthy amount of almonds. Coconut Pandan & Snickers were the two other flavours available.

The plain croissants are just divine – flaky, crunchy, soft and buttery – everything that you want out of a croissant that makes you come back for more. The Choc-Almond croissant has a crunchier texture in comparison to the plain croissant and I love the almond flavour that comes through, together with the hint of orange. I am not usually a fan of the orange flavouring in pastries or cakes, however I took quite a liking to how it is infused here at Lune.

The Kouign Amann is not as soft and flaky as a croissant, and it reminded me of something that I used to eat when I was younger – Butterfly Pastry. The sugar coating on the outside gives it the strong crunch, together with the buttery pastry layers that follow in a swirl shape that creates the interior of the pastry which gives a simple yet delicious flavouring. I got both the original and the cinnamon flavour – with the cinnamon Kouign Amann have a delicately strong cinnamon flavour to it. Yum!

The Cruffin would have to be my favourite out of all the pastries – if I had to pick. I had the Jam & Cream Cruffin and I swear this is something that you would get in heaven! The Cruffin comes looking like a muffin (of course!) but has the make-up of a croissant – the soft buttery layers – and topped with cream (in the case of the Jam & Cream flavour). The Jam had been carefully distributed in all the right places in the cruffin and together with the buttery soft layers and cream was delightful. If I was you I would definitely try out a cruffin – in whatever flavour is on offer as I am sure they would be all as good as each other!

People are constantly asking both Cam and Kate why they don’t just make more of the product – and their answer is always the same – they do not want to compromise on quality. Quality is always the key – and it really is a testament to the lines that are always present on the three days that they are open.
However, recently a window of opportunity has opened, and they are have a new partner in the form of Nathan Toleman, who owns The Kettle Black and Top Paddock and co-founded a string of cafes including Liar Liar, Three Bags Full and Two Birds One Stone. The Lune team are looking at sites on the north side of the city that will allow them to expand their production without sacrificing quality. So stay tuned – but in the meantime I would highly recommend you go down to Elwood and try these delicious pastries – trust me they are well worth the early wake up call!

Hero Subs – Not Your Ordinary Sandwich

Hero Subs is brought to us by Michael and Eleena Tan who are responsible for The Grain Store. Hero Subs was inspired by Michael’s travels around New York City together with his fond childhood memories of being looked after by a traditional Nonna – eating food such as parmagianas – and putting what he finds special into food.

Hero Subs specialises in oversized gourmet Brooklyn inspired subs – with a distinct Melbourne twist – that come in an array of fillings and flavours. The subs come in both half and full sizes and you can choose from a Brioche bun or a Baguette style (Seeded, White or Gluten Free). Hero Subs has funky quotations on its wrapping – sayings like “Stack Mad Chips Spread Love With My Peeps”, “Spread Love, It’s The Brooklyn Way” – and tissues – like “Oh You Missed A Spot.”

I ordered the #Cypress Chill – Corn Fritters, Green Goodess Spread, Baby Spinach – Diced Tomato and Herb Fetta Sub in the Wrap Style (Chia Seed) with a side of Potato Kris Cross Chips. The Kris Cross Chips were crunchy on the outside, flavoured well and soft like clouds on the inside. There is just something about eating chips in the shape of a kris cross that makes it more appealingly delicious. I really enjoyed the #7Grand Wrap – the corn fritters was perfectly cooked with the right level of crunch and consistency. I loved the combination of the spinach, fetta and the Green Goodess Spread – it was tanginess exemplified but not over the top. A really great tasting sub!

One thing I would love to see on the menu would be some seafood subs – prawns or soft shell crab would taste delicious! Hopefully they start making them soon!

Good Food & Wine Show – Thanks Rachel’s Gourmet Yoghurt

I was invited to check out the Good Food & Wine Show in Melbourne by Rachel’s Gourmet Yoghurt. I must say this year’s show was the best show put on than any of the other previous years I have attended. There were lots of interesting food and drink stalls, and in keeping with the times lots of products that were tailored to the growing need for Gluten-Free, Dairy Free, Lactose Free etc.

Rachel’s was launched in the early 90s and has grown onto becoming one of the UK’s favourite yoghurts. With that market secured they have transitioned to Australia to make the same indentation in the market. Rachel’s yoghurt is a low fat product that combines fresh Australian Milk together with a unique fusion of fruits resulting in creamy, delicious yoghurt. They use a traditional recipe and quality ingredients. There are currently 4 different flavours:

It was quite ironic that I received this invite from Rachel’s as it was only the previous couple of weeks that I felt like yoghurt and went to Woolworths and ended up purchasing Rachel’s yoghurts as the flavour combination really interested me. I tried the Mango & Madagascan Vanilla, as well as the Black Plum & Roasted Fig. I loved and enjoyed both the flavours – they both had a smooth and creamy texture paired together with nice big fresh chunks of fruit! Perfect! What is even handier is that under the lid, there is a foldable spoon that you can use! Briiliant! They do really follow their tag line – Combining passion and care with premium ingredients.

I am just going to point of some of my highlights and stalls that I thought were pretty amazing. We started off with trying out some nuts (I don’t have any pictures, as I think I was too busy trying out the samples) – I ended up buying Chilli Macadamias and Chilli & Lime Cashews – both of which were delicious! They also had some sweet flavoured nuts – such as honey and caramel macadamias and cashews.

The Ginger People were another stall that was exciting – we tried some lollies that contained ginger as well trying the ginger sweets – in the form of chewies and candies, as well trying out some of the beverages on offer. We found the crystallised ginger a bit too overpowering but enjoyed the ginger sweets and the beverages. One of their products that caught my eye was the Organic Ginger Syrup – their version of the honey maple syrup – unfortunately I didn’t get a chance to try this out.

Bruce Cost Ginger Ale

One of my favourite stalls of the day would have to be the Bruce Cost Ginger Ale – where we got to sample ginger ale with a difference. I am the first to admit that I am not a huge fan of ginger beer or ginger ale, but I had a look at the flavours and they really tweaked my interest. The Jasmine Tea and Pomegranate with Hibiscus that caught my eye. There is also a Passionfruit with Yellow Ginger (Tumeric) flavour as well as the Original and ^66”. I tried the Jasmine Tea flavour first and loved the jasmine notes mixed together with the refreshing ginger. Next up I sampled the Pomegranate with Hisbiscus – the pomegranate was subtle and once again it was a refreshing drink. I did prefer the Jasmine Tea flavour so I decided to purchase some.

This ginger ale is sparkling and refreshing is made with only fresh ginger and pure cane sugar. To that they add the full leaf of jasmine or fruit pulp to get the flavouring just right. The end result is unfiltered, which has tiny ginger particles through it that need to be shaken before drinking and enjoying. It also provides a source of iron, calcium, vitamin A and C. Walkerswood Carribean Foods was another stall that caught my eye – as I LOVEE SPICY foods and sauces! I am always on the lookout for the next spiciest sauce that I can add to my food for that extra oomph! The Jamaican Scotch Bonnet Pepper Sauce was my favourite and rather spicy! A clear runner up in terms of both flavouring and spice was the Jaimaican Jonkanoo Pepper Sauce.

Walkerswood Carribean Foods is named after a rural village in Jamaica hidden in the green hills of St Ann – there a factory produces these wonderful spicy tasting sauces, seasoning and condiments from the freshly harvested produce from the area. Boss Man Jamaican Jerk Boss Man Jamaican Jerk Cassowara Chips

 There was also the Jamaincan Boss Jerk Food stand and this is where we decided to get some food for lunch. There was corn on the cob for sale, as well as their famous Jerk Chicken, but we both decided to get the Cassava chips. They were so popular that we had to wait in line a good 10 minutes to get them. Cassava is a woody shrub and is a major source of carbohydrates and is also called manioc, yucca, mogo or tapioca root. The chips came in a cone shaped banana leave style paper with seasoning. I added some of the spicy sauces. The chips tasted great and were worth the wait – they had a sweetness to them and were soft on the inside.

Noshu (which literally means No Sugar) is an Australian owned company and strive to achieve their philosophy “All Love, No Sugar” – and I think they do this really well. When chatting to the girl working at the stall she mentioned that just because there are people out there with allergies, intolerances or even diabetes – they shouldn’t have to give up on proper tasting food and eat products that taste like cardboard – this is where Noshu steps in. Noshu is 100% sugar free and the sweetness that they do have in their products come from ingredients such as pumpkin, coconut and gluten free flours. What really caught my attention was when the girl mentioned that their baked donuts have less sugar, less carbs and more fibre than a medium apple! Amazing! Currently their products consist of donuts – there are three different flavours to choose from – however in the near future they are looking to extend these to include chocolate brownies and ANZAC biscuits.

The three flavours of donuts are – Dark Chocolate and Raspberry, Caramel Spice and Banana and Coconut. My favourite would have to be the Dark chocolate and raspberry and caramel spice. They have denseness to them, yet it feels and tastes really smooth. They really do taste good and you don’t have to feel guilty eating them! Double win!

Coconut Essence Coconut Essence Product List Coconut Chips and Nutella

JT’s Coconut Essence was another stall that had some great products – their coconut chips in a variety of flavours as well as their version of nutella – cocotella were a hit. Their cocotella is sugar, gluten and nut free! The girl at the stall recommended eating the cocotella with banana – apparently they made for a great mix.

I really enjoyed their coconut chips – there is original, chocolate and salt & vinegar – especially the chocolate flavour. The Salt & Vinegar flavour I wasn’t a huge fan of, and the original was quite tasty as well. The coconut chips are baked not fried, and have the perfect crispness to them. They are high in antioxidants, minerals, caprylic and beneficial lauric acids, all whilst being vegan, dairy and gluten free together with having no cholesterol and trans fat. They are really addictive (in fact I am snacking on some whilst I write this post!)

JT’s Coconut Essence is an Austrlaian owned company and produce products that are pure, natural and healthy from fresh green coconuts that are harvested and canned on the same day. As well as visiting a number of other stalls, we also took a break from walking around carrying all the things we bought to watch Jacques Reymond Live at the Good Food Theatre. He was making a lamb dish, a pork belly dish and a dessert dish of balsamic strawberries and cream. It was great to watch a chef of his experience and talent in action, as well as listening to his helpful tips and secrets. He has a great character and exudes enthusiasm about cooking and food – and he is quite funny too!

Boosey Creek Cheese was one of the cheese we got to sample in a very busy and crowded Cheese Alley. Quite tasty I must say!

Great Offer for Cured Meats
This show-bag of Cured Meats from Barossa Fine Foods was fantastic – it came with 5 different types of cured meats as well as small cleaver which was not only a handy size but had a very sharp blade.

Overall A and I had a great time at the Good Food and Wine Show and walked away with many heavy bags of our purchases! So much so that we had to tram it to meet the boys to carry the heavy weights to the car!

Duchess of Spotswood is a gourmet cafe which sources high quality produce and delivers it on the plate in an aesthetically pleasing manner. The flavours are simple yet have a gourmet, modern feel to them. At this cafe – you dont get your usual breakfast dishes of eggs and tomato with a side of avocado for example, you get a variety. Duchess of Spotswood chef Andrew Gale states “People are expecting more and more when they go out for breakfast,” and this why the Duchess of Spotswood menu is the way it is – it is not your normal breakfast menu (http://www.duchessofspotswood.com.au/themenu.php).

Duchess of Spotswood also offers Lunch and Dinner (on Thursday to Saturday evenings) – which consists of a 3 course menu for $55. I definitely want to go back and try out the dinner degustation menu. When you visit their website you can see pictures of the dishes – which is enough to make you want to make the trip over the West Gate bridge to Spotswood no matter where in Melbourne you live.
